This is one of my go to weeknight meals, not only because it’s delicious, but also requires very little clean up! It’s a winner all the way around

• 1 tsp + 1⁄2 tsp Salt
• 2 tbsp Olive oil, divided in half
• Other fajita toppings of your choice

For Chicken Fajitas: Chicken breasts, boneless, Green bell pepper, Yellow onion, Chili powder, Ground cumin, Ground paprika, Garlic powder, Lime, Cilantro, Romaine leaves, whole, Cheddar cheese, shredded

For Black Beans: Can of black beans, Chili powder, Cumin, Garlic

Cook this recipe in these simple steps

Step 1
Preheat oven to 400 degrees.

Slice bell pepper and onion into 1⁄2 inch slices.
Step 2
Drizzle peppers and onions with 1 tbsp olive oil and toss to coat evenly.

Drizzle chicken with 1 tbsp olive oil and toss with chili powder, ground cumin, paprika, garlic powder and 1 tsp salt.

Spread peppers and onions in a single layer on the baking sheet. Place chicken in the center. Then bake for 18-20 minutes or until chicken is fully cooked.
Step 3
Chop 1 tsp of garlic.

In a small sauce pan, combine black beans, chili powder, cumin, 1⁄2 tsp salt and chopped garlic. Bring to a simmer over medium heat, stirring occasionally, for 7-9 minutes or until thoroughly heated. Transfer to serving dish.
Step 4
Once chicken is fully cooked, slice into strips and transfer to a serving dish with peppers and onions.
Step 5
Serve fajitas on romaine leaves and top with cheese, sour cream, lime, cilantro or other toppings of your
choice.

Dinner is served!
