This low carb take on a southern favorite is one of our go to weeknight meals! It is so simple, so flavorful, and so quick to throw together. This flavor packed shrimp over creamy, rich cauliflower grits is a lovely combination you’ll find yourself going back for time and time again.

For Spicy Bacon Shrimp: Shrimp, peeled, deveined, tail-off, Bacon, Red onion, Chopped garlic, Red pepper flakes

For Cheesy Cauliflower Grits: Cauliflower rice, Heavy cream, Butter, Gouda cheese, shredded

Cook this recipe in these simple steps

Step 1
Add the cauliflower rice, 1 tsp salt, heavy cream, and butter to a large sauce pan and bring to a simmer over medium-high heat. Cook for 10 minutes, stirring often
Step 2
Chop red onion and garlic.

Chop bacon into 1⁄4 inch pieces.
Step 3
In a skillet over medium-high heat, saute bacon for 2 minutes. Add onion and saute an additional 2 minutes.

When cauliflower rice is tender, remove from heat and stir in cheese. Transfer to serving dish.
Step 4
Add shrimp to bacon and onion mixture. Saute for another 2 minutes. Add chopped garlic, olive oil, and red pepper flakes. Saute for a final 1 minute. Salt to taste.
Step 5
Serve Spicy Bacon Shrimp over Cheesy Cauliflower Grits.
